Which BeagleBoard are you using? On the -xM this is normal as it has no NAND on board to store this information. That is why we use the boot.scr file. On a Rev C4, this can be the case if you have not stored any of the environment variables. This is not an indication of a problem with the board.
NAND is Flash memory, non-volatile memory.
Environment variables are data that tells the kernel how to operate and the environment under which is is running.
You cat try using google to look up these terms and find a lot of information about them.
