I'd like to set the video mode for my Dell 2407WFP-HC monitor, to which my Beagle is connected at this time. Is anyone using this monitor for the Beagle? Can I trust U-Boot simply to find the right mode for me? How do I set dvimode?

The problem you are seeing stems from fact that the available
resolutions in Angstrom seem to favor HDMI TVs and not VESA monitors -
CRT or flatpanel LCD...
Are you saying that the in-kernel modedb.c favours hdmi TVs? That's what angstrom is using, as is pretty much anything out there, like the linux on your desktop PC.
I'm really curious why you want to pin this on angstrom though, please explain.

Where do the OMAP specific patches for things like the modedb.c file come from?
that's exactly the point: there are no omap specific setting in modedb.c.
I suspect you're confusing the hardware limited omap pixelclock with modedb.c.
