Can someone please provide some indication as to what the future
holds? For instance, if do-it-yourselfers want to buy Beagle Board
xM's three years from now in quantities of one, will this be possible?

At this point in time, there are no plans to stop making boards as long as people are there to buy them. That is not to say that newer versions may not come out. As long as the need is there, they will be made. As the board is open source, all the information is provided to allow anyone to make the board if they choose. The parts used on the board definitely will be around for a long time, well in excess of the 3 year window you are asking about.
